Roasted Pumpkin Soup

Pumpkin soup is a usually thick soup made from a puree of pumpkin. It is made by combining the meat of a blended pumpkin with broth or stock. It can be served hot or cold, and is popular thanksgiving dish in the United States.

Ingredients

  • 650 gm Pumpkin (preferably butternut squash). Cut in cubes
  • 1 sliced onion
  • 3 to 4 garlic cloves
  • 1/2 cup fresh cream
  • 2 cups of water
  • Salt and pepper to taste

Pre heat oven to 200 degrees. Spread pumpkin cubes, onion and garlic on to a baking sheet. Drizzle some olive oil(or any oil) over the pumpkin mixture and some salt and pepper. Roast this mixture for 20 to 30 mins in the oven. Take it out and keep it aside for cooling.

Now grind the mixture in a grinder and make a paste of it by putting some water if needed. You can also create the paste by using chicken or vegetable broth. Drain the paste into a pan with water using a strainer.

Put the pan on low to medium flame and add two tbsp olive oil. Once the oil is heated, put the mixture in the pan and add one more cup of water or broth. Simmer for 10 mins. Add 1/2 cup of cream to it and stir continuously for 2 mins. Add salt and pepper according to the taste. Simmer for 10 more minutes.

Soup is now ready ! Garnish with two tbsp of cream and serve hot !
